THE CALLINECTUS SAPIDUS

Whose scientific name means “beautiful and tasty swimmer”, it is a decapod crustacean with a bluish-green shell that, in the case of females, has reddish pincers.

The seven presentations of this exquisite meat come in heat-shrinkable plastic containers or canned containers. Both presentations are exported in cava packages with a maximum capacity of 20 1lb containers.

In addition, the authenticity of the blue crab meat, carefully extracted by hand, is guaranteed under the Master Crab signature that uses the HPP (High Pressure Processing) treatment and the strict quality standards of HACCP (Hazard Analysis and Critical Control Points).

SUPER JUMBO LUMP

They are large pieces of meat taken from the muscles that connect to the fins of the blue crab. It is a highly appreciated meat for its large size, white color and exquisite flavor. They are perfect for preparing cakes, crab cocktails and other appetizers such as canapés.

JUMBO LUMP

It is taken from the same area as the Super Jumbo Lump, but from smaller crab species. They are recommended for croquettes or with garlic.

SUPER LUMP

It is a mixture of large pieces of Jumbo Lump with larger pieces of the white meat behind the shell of the crab’s body. It is ideal to accompany pasta or risotto.

LUMP

It is a mixture of separate pieces of the Jumbo Lump and special meat or smaller pieces of white meat behind the shell of the crab’s body. It is used in the preparation of crab cakes, sauces, salads, and stews.

CLAW

It is the meat that is removed from the extremities of the crab, including the claws and swimming fins of the crab. It is dark amber in color and has a strong flavor. It is recommended for sauces and soups.

COCTAIL CLAW

It is the dark amber colored meat found in the first section of the tongs. It also has a strong flavor profile, ideal for meat fillings and stir-fries.
